April Meal Plan

April… already? Wow. March Madness was in full effect at our house and I am not talking about Basketball. But, speaking of basketball…I am numero uno in our bracket. I am so enjoying the bragging rights…hoping I can stay that way until the end but thinking my cousin, Rachel, is going to pull out the win ūüė¶ So, I’m basking in the glory while I can.

Now, back to our own March Madness. Baseball and Soccer are in full swing with HAP practicing 4-5 days a week for one or the other. We had a wedding, weekend travels and a nasty stomach bug that resulted in a false labor/dehydration/hospital stay. Needless to say our March budget and meal plan was non existent. It happens. I’m hoping April is nicer to us…PLEASE!

With March behind us, let’s see what I’ll be cooking up for April. April is equally filled with baseball, soccer and weekends away which has left me only having to plan 9 meals for the month. You’ll notice the majority of them are crockpot meals. Easy to throw everything in in the mornings and have it ready when we are home from practice. Here they are with recipes linked in:

That’s it. Easy month. The first 3 recipes were from “The Crockin’ Girls” (¬†http://crockingirls.com¬†)¬†. I love their stuff and you can never go wrong with their recipes. They are easy and family friendly. The other 2 recipes I linked are from Mix and Match Mama ( http://mixandmatchmama.com ). There are many things I love about Shay. #1 if you are a fan of “The Bachelor” , then you know she is Sean Lowe’s sister. #2 She has an adorable family, a great faith and she shares many details about both in her blog. And, #3 She has GREAT recipes. Easy, budget and kid/family friendly. If you aren’t following her blog, you should be.

Anyway, that’s all folks…I’ll do better with this blog thing this month.





Pickles, a Luncheon, a Blackout and a Memory

Friday’s Workout:

PICKLES!! I have turned into a pregnant cliche. I am craving pickles like never before. I didn’t eat the typical “pregnant stuff” with the boys so having this intense craving for pickles is very new to me. I finished off a whole jar on Friday (15 pickles for myself with the husband eating 2). I’m sure there are plenty of things wrong with this but it gave me comfort in the fact that they are 0 calories.


No workout – Rest Day

As most of you know by now, my cousin is getting married! YAYYY!!! I have been traveling a lot lately for showers and such but this past Saturday’s shower was by far my favorite. A sit down luncheon at The Gallery Restaurant in Merigold, MS with a McCarty Pottery shower to follow. HEAVEN!

After the lunch and shower we were able to go across the street to the McCarty store. Walls and walls of McCarty Pottery. Pinch Me.


If you ever find yourself in the Mississippi Delta, add this place to your to do list. It doesn’t disappoint.

From a nice Luncheon surrounded by pottery to a quick trip back to Memphis for a 1 and 3 yr old birthday party. Just another day in the life.


After church and lunch we headed to the park to meet up with one of our favorite families, The Baker’s. The men and boys hung out at the park while Courtney and I went for a nice 3 mile run/walk.

It was such a pretty afternoon yesterday and we both enjoyed the conversation much more than the run.

Is your mouth watering yet?! I had text CB a few weeks back telling her how much I was craving one of her¬†grandmother’s¬†homemade pecan cakes and her precious grandmother made me one. My friends rock!!! I also picked up a jar of her homemade sugar and garlic marinated pickles while we were there. AMAZING!! I tried prying the cake recipe out of her but it was one of those oh its so easy I don’t even measure recipes. We will get it out of her one day…i’m determined.

Seems like there was something else important going on yesterday besides running and cake. Oh yeah, The SuperBowl/BeyonceBowl. You pick. Having two Memphians to root for, Micheal Oher Рalso a former rebel HOTTY TODDY and Morgan Cox, we were going for the Ravens. ( http://wreg.com/2013/02/03/mid-south-players-shine-in-super-bowl-spotlight/ ) Looks like we picked the right team to cheer for!

Let’s be honest, not having a dog in the race, so to speak, I was really just watching for the commercials and my girl Beyonce. The commercials disappointed me a bit as I wasn’t blown away by most of ¬†them but that halftime preformance was the best I had seen in years. Flawless.

After the big performance, was the big blackout. Please explain to me how during ¬†the biggest televised event of the year, the lights go out? Shouldn’t they have thought about this?! I would be really interested in knowing the ratings numbers before vs. after the blackout. As for me I took a bath and a phenergan and “blacked out” haha. I asked Will if the Ravens won during one of my many nighttime bathroom trips. He said yes, I slept peacefully.

Our SuperBowl Spread:

Cocktail Wieners


1 lb cocktail wieners
1 cup bbq sauce
1 cup grape jelly

Place all ingredients in crock pot and cook on low for 2 hrs or place all ingredients in large pot and cook on low for 1 hour.

White Rotel Dip


Block of Cream Cheese

Can of Rotel

1 lb. Breakfast Sausage

I brown the sausage in skillet on the stove top. Drain. Return Sausage to pan and add softened cream cheese and Rotel. Let simmer until creamy or desired consistency. Serve warm with Fritos or Tortilla Chips.

Hot Bacon and Swiss Dip


1 (8 oz.) pkg. cream cheese
1/2 c. Mayo
4 oz. Swiss cheese, shredded
2 tbsp. green onion slices
8 slices bacon, crisply cooked, crumbled

Mix all ingredients together. Bake on 350 until Bubbly.

Serve with Ritz.

We snacked so much yesterday afternoon that we just skipped dinner altogether. oops.

On a slightly different note, I can’t write a whole blog post on February 4th without mentioning my precious Mamaw Dixie. Today marks 5 years at around this exact time that I am typing that she went to be with the Lord. I miss her every single day. Unless you knew her, words cannot possibly explain the impact she had on this world and all those that she touched in it. You can choose to be sad or ¬†you can choose to be happy. Today, I choose to be happy. Happy for the memories, Happy for the times I did have and Happy for the¬†privilege¬†not only to say that I knew her but to live in her legacy.

She was so excited to become a “Great-Grandmother” . During my 36 hours of labor that went well into the midnight hours, she did not leave that hospital. The picture below was taken around 4 in the morning when we finally got to meet our sweet Hayden Alexander. She kept telling him I am your “GREAT” Grandmother, saying GREAT louder than the rest. She was so proud.


Hayden and I talked about her this morning, I was telling him how much she loved him. Though my kids may never know her, I pray that they will know her in memory. In that sweet 5 year old voice all he said was “Mommy, she was pretty. Can I have cereal now?” Yes, yes she was bud and yes, you can. ūüôā May your day be filled with the¬†innocence¬†of a child.

Skinny Pimento Cheese

Here is the pimento cheese recipe from Kash’s birthday party. Did I forget to mention that its a “healthier” version too? It always gets rave reviews and you won’t believe how simple it is!

Skinny Pimento Cheese


2 cups shredded cheese (you can buy the already shredded kind but I like to buy a block and shred it myself. I like the consistency of it better.)

1/2 cup nonfat plain Greek yogurt

1 tablespoon mayo

4 oz. jar of pimentos

Salt and pepper to taste

Dash of lemon juice

Dash of Worcestershire

Dash of Hot Sauce

Sometimes I even throw in a little garlic powder, too.
Combine all ingredients together and enjoy!

So yummy!
