Happy Cinco de Mayo!!

We celebrated last night with some friends so I guess it was technically a Happy Cuatro de Mayo from us!! Around here we look for any excuse to have a get together and with our crazy schedules they seem few and far between. With a nasty, rainy weekend and all of outdoor activities canceled (soccer, baseball) it was a perfect afternoon/night to hang out with 2 of our favorite couples! No excuses. Although, I do wish the weather would have cooperated a little bit so some back patio fun could be had. Oh well. Beggars cant be choosers, right? It just so happens the Kentucky Derby was yesterday too. I love watching all the pre stuff. The big hats, the celebrities, the horses names… I am very intrigued by the whole process. We all had our certain horses we were pulling for. Though none of them won, it was fun having a horse to root for. I used store bought taco salad shells and set out some Cheese, Sour Cream, Lettuce, Tomato and Salsa for a fun, yummy and easy Taco Salad Bar.

Some Virgin Margarita’s for the preggo gals and some Bud Light Lime and Bud Light Lime-a-Rita’s for those that get to celebrate this holiday the right way! 🙂

Strawberry Cake – not really a Mexican dish but I was craving it and figured this was a good excuse to make one! I used this recipe: http://www.callmepmc.com/2012/09/easy-strawberry-cake/ with 2 tubs of store bought cream cheese frosting, I whipped the frosting with the mixer and added some fresh strawberries.

I think we all ate until we thought we were going to pop. It was such a great time hanging out with wonderful friends and watching 2 minutes and 30 seconds of something they hype up all day long. Dang “Overanalyzed” didn’t pull out the W for me. Oh well.

PICKLES!! I have turned into a pregnant cliche. I am craving pickles like never before. I didn’t eat the typical “pregnant stuff” with the boys so having this intense craving for pickles is very new to me. I finished off a whole jar on Friday (15 pickles for myself with the husband eating 2). I’m sure there are plenty of things wrong with this but it gave me comfort in the fact that they are 0 calories.

Saturday:

No workout – Rest Day

As most of you know by now, my cousin is getting married! YAYYY!!! I have been traveling a lot lately for showers and such but this past Saturday’s shower was by far my favorite. A sit down luncheon at The Gallery Restaurant in Merigold, MS with a McCarty Pottery shower to follow. HEAVEN!

From a nice Luncheon surrounded by pottery to a quick trip back to Memphis for a 1 and 3 yr old birthday party. Just another day in the life.

Sunday:

After church and lunch we headed to the park to meet up with one of our favorite families, The Baker’s. The men and boys hung out at the park while Courtney and I went for a nice 3 mile run/walk.

It was such a pretty afternoon yesterday and we both enjoyed the conversation much more than the run.

Is your mouth watering yet?! I had text CB a few weeks back telling her how much I was craving one of her grandmother’s homemade pecan cakes and her precious grandmother made me one. My friends rock!!! I also picked up a jar of her homemade sugar and garlic marinated pickles while we were there. AMAZING!! I tried prying the cake recipe out of her but it was one of those oh its so easy I don’t even measure recipes. We will get it out of her one day…i’m determined.

Seems like there was something else important going on yesterday besides running and cake. Oh yeah, The SuperBowl/BeyonceBowl. You pick. Having two Memphians to root for, Micheal Oher – also a former rebel HOTTY TODDY and Morgan Cox, we were going for the Ravens. ( http://wreg.com/2013/02/03/mid-south-players-shine-in-super-bowl-spotlight/ ) Looks like we picked the right team to cheer for!

Let’s be honest, not having a dog in the race, so to speak, I was really just watching for the commercials and my girl Beyonce. The commercials disappointed me a bit as I wasn’t blown away by most of  them but that halftime preformance was the best I had seen in years. Flawless.

After the big performance, was the big blackout. Please explain to me how during  the biggest televised event of the year, the lights go out? Shouldn’t they have thought about this?! I would be really interested in knowing the ratings numbers before vs. after the blackout. As for me I took a bath and a phenergan and “blacked out” haha. I asked Will if the Ravens won during one of my many nighttime bathroom trips. He said yes, I slept peacefully.

1 lb cocktail wieners
1 cup bbq sauce
1 cup grape jelly

Place all ingredients in crock pot and cook on low for 2 hrs or place all ingredients in large pot and cook on low for 1 hour.

White Rotel Dip

Block of Cream Cheese

Can of Rotel

1 lb. Breakfast Sausage

I brown the sausage in skillet on the stove top. Drain. Return Sausage to pan and add softened cream cheese and Rotel. Let simmer until creamy or desired consistency. Serve warm with Fritos or Tortilla Chips.

Hot Bacon and Swiss Dip

1 (8 oz.) pkg. cream cheese
1/2 c. Mayo
4 oz. Swiss cheese, shredded
2 tbsp. green onion slices
8 slices bacon, crisply cooked, crumbled

Mix all ingredients together. Bake on 350 until Bubbly.

Serve with Ritz.

We snacked so much yesterday afternoon that we just skipped dinner altogether. oops.

On a slightly different note, I can’t write a whole blog post on February 4th without mentioning my precious Mamaw Dixie. Today marks 5 years at around this exact time that I am typing that she went to be with the Lord. I miss her every single day. Unless you knew her, words cannot possibly explain the impact she had on this world and all those that she touched in it. You can choose to be sad or  you can choose to be happy. Today, I choose to be happy. Happy for the memories, Happy for the times I did have and Happy for the privilege not only to say that I knew her but to live in her legacy.

She was so excited to become a “Great-Grandmother” . During my 36 hours of labor that went well into the midnight hours, she did not leave that hospital. The picture below was taken around 4 in the morning when we finally got to meet our sweet Hayden Alexander. She kept telling him I am your “GREAT” Grandmother, saying GREAT louder than the rest. She was so proud.

Hayden and I talked about her this morning, I was telling him how much she loved him. Though my kids may never know her, I pray that they will know her in memory. In that sweet 5 year old voice all he said was “Mommy, she was pretty. Can I have cereal now?” Yes, yes she was bud and yes, you can. 🙂 May your day be filled with the innocence of a child.

Bachelorette Weekend In The “Big Easy”

2 weekends ago (MLK Weekend) I went to New Orleans for a Bachelorette weekend. It took me a week to recover to even attempt a blog about it. And a week to blog about it. Better late than never, right? Pregnant+Nonstop go go go=Exhaustion. It was such a fun weekend for my cousin, Lauren. Me, being the Matron of Honor, had the fun task of planning the whole weekend. I think I was the ONLY one out of the 10 of us who had never even been to New Orleans. My “fun task” quickly turned into lots of research and lots of help and opinions from others. I am so proud to say that I can’t imagine doing NOLA any other way. We went to some fabulous places. My eyes, ears, mouth and stomach may never be the same…for MANY different reasons.

Yes, they were filming a movie. Yes, the guy is hanging upside down from a building and yes, the sign says “I have a tiny penis”. Never a dull moment.

We stayed at The Saint Hotel: Autograph Collection right on Canal Street. It was 2 streets away from Bourbon and the PERFECT location for us. I cannot say enough good things about this hotel. Everything was so nice and the staff was EXCEPTIONAL all the way down to the valet guys, bellman and front desk employees. It was an A+.

This restaurant was really so neat. It is small and is an American interpretation of the social houses so commonly found in London. The character of the restaurant alone is enough to go there and not to mention the food is AMAZING!

For an appetizer we started out with the Jalepeno, Sweet Corn & Cheddar Fritters. The majority of everyone ordered the Fish Tacos  with a side of fries and several orders of the Truffled Mac & Cheese for the table.

Off to Bourbon we go. Me, being a Bourbon street virgin, can only describe it as my version of hell. #1 I was sober. #2 There was a group of 10 of us walking down the middle of the street with people yelling obscene things from balconies and throwing beads at your head. HELL. Now, once I accepted the fact that this is what all the madness was about, I began to enjoy Bourbon Street for what it is really intended for…People watching. I honestly think the second some of these people turn the corner onto Bourbon, their dignity goes out the window. If only I had that much confidence. Woo-Wee. I swear I heard one middle-aged woman yell “The only problem is, I’m wearing a bra!” No ma’am, this is NOT a problem. I actually thank you for remembering to put it on tonight. After what seemed like a forever long walk we finally picked a bar. I’m not sure what made us “decide” on Razzoo Bar and Patio, but I am certain it was the overweight, mid twenties, homosexual white guy and the skinny, mid forties, straight black guy cover duo that sucked us in. I’m obsessed with them. Well, until they called our dancing “The Lazy White Girl”. Offended. Well, not really.. its pretty accurate, actually.

Saturday morning me and Emily were up around 7 to go for a run. (Something about that internal clock). Being as I am 1. Pregnant so 2. I couldn’t drink, I was very much looking forward to our run and seeing the French Quarter in a different light. We headed left out of our hotel onto canal street and ran straight up to the RiverWalk. We got there right as the sun was coming up over the water. It was beautiful. We continued to run along the RiverWalk and then back down Canal and down Bourbon. I guess it had never crossed my mind that they cleaned Bourbon daily. We got to see this process. Literally, hoses and hoses of water and men scrubbing the streets, walls, fire hyrdrants etc… Wouldn’t you LOVE to have that job?!

We completed 3.16 miles around the French Quarter and quickly headed to Starbucks. (The real reason we got up at 7 am, right?)

Our Brunch idea quickly turned into more of a Lunch. In New Orleans you are unable to make reservations for Brunch/Lunch at most places. We walked to Jackson Square and figured we would just see what we could find. After being unsuccessful at a couple of places we finally stumbled across___________, (I can’t remember the name. 😦 but when I do find out I will update with all the info) right by Jackson Square that could seat us within 15 minutes. We’ll take it! A good stumble upon it was because the food and atmosphere were both wonderful! I settled on Red Beans and Rice while others chose Seafood Gumbo and most choosing a Crawfish PoBoy. Yummy!

After lunch, it was such a pretty day for it to be January, so we just decided to walk around the French Quarter and see all that there is to see.

The painted man pretending to be a statue–a classic NOLA staple. It didn’t matter that I knew that he was real and that I knew he was going to jump up, I still screamed every time he did it. Why do these things freak me out so much?!

The guy that turns into a car and drives through Jackson Square. I really just took this picture to send back to my 5 year old, that by the way, was completely unimpressed. But, I thought it was pretty neat. To each their own.

Next, we made our way to the French Market for a little day drinking (virgin for me), praline tasting and shopping, of course.

After a long and fun filled day of taking in all that New Orleans has to offer, it was back to the hotel for a Lingerie shower for La. Let the fun begin…

In case you are wondering…the FASTEST way to embarrass someone is to throw them a Lingerie Shower. Make them open thongs in front of their friends while the friends name the lingerie obscene names. Done. 🙂

The adorable personalized wine glasses I made for each of the bridesmaids and the bride using these decals I bought off Etsy. They turned out so cute and everyone loved them. A fun keepsake from the weekend.

I had each bridesmaid send me a letter and pictures of them and Lauren and also pictures of the whole group. It ended up being 28 pages of great memories and pictures and something that she can cherish forever. It was such a fun idea and I had such a great time putting it all together.

It was phenomenal! 5 star, for sure. I don’t think you could have gone wrong with anything on the menu. Everyone either got the steak or the red fish and everyone could not speak highly enough of it. The service was amazing. I really feel like we got very lucky, there is not one place we went that did not treat us like gold. The service all around the quarter was to die for. Because of this, I feel like our weekend could not have gone any better.

Sunday:

We all got up and got ready to head home. 😦 A few of us had a 7 hour drive ahead of us, some were catching planes and others just traveling a few hours back. Breakfast Sunday consisted of a corn dog and cheese fries.. keepin’ it classy, Paige.

Celebrating Lauren becoming the future Mrs. Broyles has been so much fun and I can’t wait until their big day!! I know everyone made memories on this trip that will last forever!

The BEST Punch Recipe

This recipe is amazing! My Aunt gave it to me a few years ago and it’s been a staple at every party, shower, get together ever since. Once you try it…you’ll never serve anything else.

Punch Recipe:

1 cup sugar

12 oz. can frozen Orange Juice

12 oz. can frozen Lemonade (I’ve used frozen Pink Lemonade too when they were sold out of Lemonade. Works just the same.)

Large can Pineapple Juice

2 Bottles Ginger Ale

Orange

Lemon

Directions:

Dissolve 1 cup sugar in 2 cups of really hot water. Pour into plastic gallon size jug and add juices. Mix together; add water to fill jug and then freeze. (I usually do this the night before). Unthaw about 2-3 hours before needed. Add 1 to 1 ½ bottles of Ginger Ale when ready to serve. Cut Lecmon and Orange slices to float (makes it pretty).

One gallon will serve about 35 people based on using 6 oz. cups.

Kash’s 2nd Birthday Party

I can’t believe my little guy is 2! Seems like just yesterday I was having him. *tear* Time sure does fly! He is obsessed with 3 things Mickey, Yo Gabba Gabba and Elmo. After doing a little research I concluded that Elmo was going to be the “easiest” themed party to throw. Although, after I decided on that it became quite difficult because I then realized most of things are “Sesame Street” themed not just “Elmo” alone. So… I improvised. Let’s start with the decor. We decided to have the party at our house. His birthday is so close to Christmas that its just too much trying to do anything else. We invited a few of our close friends and family and we were all set and ready to go.

I made this wreath by taking a cardboard wreath frame from Michael’s and wrapping 2 feather boas around it. I took an Elmo stuffed animal from the boys room and attached him with a pipe cleaner and spray painted a wooden number 2 and attached it with ribbon for Kash’s own personal birthday wreath. I really liked the way it turned out!

This is our entry way right when you walk into the front door. I free-handed  Elmo out of some poster board and then glued his eyes, nose and mouth on. Easy peasy. Now on to the yummy stuff… The Menu. It is COLD in the south right now so I wanted to some good ol’ warm you up aka “comfort food” ) No one is on a New Year’s diet, right? In our house we have a formal dining room, then a breakfast table. The formal dining room is right when you walk into our house to the right. (The first thing everyone would see) Here, I put the Cake and Cupcakes. The party favors and also some pimento cheese dip and wheat thins (look for recipe to come..it’s to DIE for), caramel popcorn, Peanut Butter m&m’s and some fruit.

In our Kitchen, where the breakfast table is was the good stuff.. a Chili cheese pie/hot dog bar. YUM! The south is COLD right now..so I had to have some warm you up (aka “comfort food”) No one goes on a diet after the New Year anyway, right?

The whole spread consist of : Hot Dogs, Buns, Chili, Ro-Tel Cheese Dip, Fritos, Cheese, Saltines, Ketchup, Mustard, Sour Cream, Relish and Onions. It was a hit!! I found this great post on Pinterest on how to do your Hot Dogs in the crockpot ( http://crockpot365.blogspot.com/2012/04/hot-dogs-for-crowd.html ). Why had I never thought of this. Brilliant. And, they tasted great too!! Across the room in our Kitchen is a small bar. I put the drink station there fully equipped with water, juice boxes and the best punch EVER. Look for this recipe to come too. You’ll never throw another party without it.

We have a great kid friendly backyard. So the mere fact that is was 45 degrees outside wasn’t going to stop us! We have a wonderful built in fire pit so I took advantage of it. My husband started a fire and we set up a nice little s’more and hot chocolate bar for everyone. I don’t think I saw a kid in my house except for when we forced them to come inside and sing Happy Birthday. Did I mention it was also a birthday party with 10 boys and 1 girl. Those boys LIVE outside. Which is perfectly fine for this mama whose house stayed clean! Double win!!
